Abstract

"The Food Issue" piece on the meal-assembly business in Maine, including Make Thyme for Dinner in South Portland, where owner Paula Pelczar does meal prep work and clean up for busy customers. Wendy Wren opened the Prep Kitchen in Freeport this July, the first such business in Maine. Customers reserve a time slot and choose from a list of meals. When they arrive, the ingredients are ready to assemble into take-home meals.
