Beer: From Frat House to Class
Two University of Maine food science and nutrition professors, Jason Bolton and Brian Perkins, developed a class that teaches the science behind brewing beer. Some students go beyond the course to conduct research on yeasts and sour beers. It is hoped that by understanding of the brewing process and by having hands on experience with the brewing process will provide students, who will be involved in the brewing, fermentation and distillery businesses, a solid foundation.
