Abstract

"Cuiscene" piece on the wave of new food salons or food preparation stores, where customers make meals from prepped ingredients to take home. At The Prep Kitchen in Freeport, Make Thyme for Dinner in South Portland, and Entree Vous in Scarborough, salon staff does the cleanup and will also prepare entrees for the customer to pick up.
