Abstract

Article on Bayley Hill Elk and Deer Farm in Scarborough, which boasts one of the largest Rocky Mountain elk herds in the country. Nick Richardson, farm manager, says that the meat, which is sold to exclusive restaurants, is healthier than other red meat. Additional revenues are generated through harvesting the elk's antler velvet, which is prized by the Chinese for medicinal purposes and as an aphrodisiac. Richardson notes that the ground antler velvet is FDA-approved for arthritis treatment.
