Abstract

The McCurdy Fish Company in Lubec is the last of the herring smokehouses that once crowded the Down East coastline. In 1983 McCurdy's packed 1.6 million strips of herring meat, each one strung, cut, split, skinned, weighed, and nailed into its wooden box entirely by hand.
