Profile of Sam Hayward, 49, chef-proprieter of Fore Street restaurant in Portland. Before opening Fore Street in June 1996, Hayward worked at the Samoset in Rockland, The Wife of Bath, 22 Lincoln in Brunswick and the Harraseeket Inn in Freeport. Hayward has recently been in the news for boycotting swordfish, and is careful to designate that his scallops are harvested by divers and not bottom-scouring draggers.
