Abstract
For 25 years, Stacy Glassman has run the Lincolnville catering operation Swan's Way, which started as a Camden restaurant that served local, high-quality ingredients, but was not successful financially. The effect she achieves is one of eclectic elegance, despite the logistical problems she confronts. She starts planning as much as a year in advance of an event, particularly for weddings. Glassman's parents moved to Italy when she was in college, and much of her inspiration comes from the time she spent there.
