Abstract

"The Food Issue" piece on restaurants that offer catering services as a way to boost revenues. Chicky's Fine Diner in Westbrook caters about four events a month, while the Robinhood Free Meetinghouse can cater four events in a day. The Beale Street Barbeque restaurants in Maine abandoned a successful catering operation because of the difficulties of staffing for an inconsistent demand.
