Abstract

"Cuiscene" piece on Morse's Sauerkraut, a Waldoboro business owned by David Swetnam and Jacquelyn Sawyer. The partners still make fresh, raw kraut from local cabbages, the way Virgil Morse made in when he started the business in 1918. The couple also makes other foods from recipes given to them by neighbors of German descent. They currently sell about 100 tons of sauerkraut annually.
