Abstract

Among those who have repurposed old buildings into modern restaurants are Amber Lambke, who envisions a grist mill and bakery in the old Somerset County Jail in Skowhegan and Anne and Peter Verrill, who are converting Portland's Chestnut Street Church into a restaurant called Grace.
