Abstract

Portland Public Schools Food Service department is partnering with local organizations, including Cultivating Community and University of Southern Maine, to learn how to prepare lunch menus that are more culturally representative of the students. Khadija Ahmed, a local cultural foods leader, is the recipe developer for the project, working to create meals adopted from Central African cuisine. Ahmed and others involved in the initiative believe that food can build bridges between cultures and be a force for social change.
