Abstract
"Dining Down East" piece on chef Herbert Peters' Thomaston Cafe, an anchor in a village that is charting a new future after the demolition of the Maine State Prison. Peters, who co-owns the restaurant with his wife Eleanor, took over after a culinary student of his disappeared in the middle of renovation, leaving him with a $5,000 investment. Four years ago the native of Germany retired from teaching. Twenty of his recipes appear in "Creative Coastal Cooking."
