Abstract
"Dining Down East" piece on Scales Restaurant and Seafood Market, at the Portland Public Market, and Duckfat on Middle St. in Portland. In Scales Restaurant and Seaford Market, Sam Hayward of the upscale Fore Street restaurant runs a combination clam shack and fish market in collaboration with Dana Street, Matt and Alison Pray of the Standard Baking Co., and chef-managers Justin Cross and Matt Stewart. Rob Evans and Nancy Pugh, who have won national acclaim for their innovative cuisine at Hugo's, opened Duckfat near Hugo's, modeled on a European-style panini shop.
