Abstract

The specialty and gourmet food business is a fast-growing sector of the Maine economy. From microbrews to farmstead cheeses, mustards to jellies, oysters to lobster pot pies, Maine's growing food industry led Atlantic Monthly magazine to dub the state "the next San Francisco Bay area of food." Some entrepreneurs say the Maine mystique and the informal cooperation of those in the business aid this growth.
