Abstract

Overview of the oyster farming industry in Maine and the opening of new raw bars along the coast as Mainers, especially in Damariscotta and recently in Portland, discover a liking for oysters grown in their own waters. Oysters are extremely sensitive to their environments; factors such as water temperature, salinity, and currents impact how they taste. With one sidebar describing a dozen of Maine's better-known oysters, and another discussing two different tools designed by two different Damariscotta men to make opening oysters easier and safer.
