Abstract

Jenn Legnini runs a certified-organic food-processing kitchen on Brunswick's decommissioned naval air base. Her business is one of few in Maine to address a problem that plagues many rural economies -- how to create products that command a higher price and have a longer shelf life than fresh produce.
