Abstract
A reprinting of the title essay by Robert P. Tristram Coffin (Maine writer, Bowdoin College professor, and 1936 Pulitzer Prize winner), which originally appeared in Gourmet magazine in 1946. An introduction to the essay briefly discusses Coffin's life and contribution to Maine letters, the importance of Gourmet magazine, and the impact this essay had on former Gourmet editor Ruth Reichl when she first encountered it.
