Abstract

An interview with chef and restaurateur Sam Hayward about his experiences cooking in the dining hall of the Shoals Marine Laboratory on Appledore Island in the 1970s. Hayward discusses the intense labor of cooking for the Laboratory students; how collecting and preparing a wide array of Maine marine species sparked his interest in the intersection between ecology and cooking; and how these experiences informed his later career as an award-winning chef and cofounder of Fore Street Restaurant.
