Abstract

"Business Maine" piece on chef Sam Hayward of Fore Street in Portland, who was named the best Northeast chef by the James Beard Foundation. Clark Frasier and Mark Gaier, chef-owners of Arrows in Ogunquit, were also nominated for this year's award, giving Maine chefs two of the five nominations for the Northeast. Hayward discusses his culinary philosophy and his new project, a retail seafood store and casual restaurant called Scales, set to open in the Portland Public Market next month.
