Abstract

"The Food Issue" piece on the experimental growing on several Maine farms of quinoa--a high-protein grain from South America. Scott Christensen, executive director of the River Valley Growth Council in Rumford, helped introduce the grain to Mongolia and is working to introduce it in Maine. Difficulties include solving pest and weather problems, codifying agricultural techniques, and processing it once it is grown. Christian Kryger, a farmer and executive chef at Portland-based Marketside Grill, uses the grain in cooking and wants to grow it.
