Abstract
Article on Wells-based Borealis Breads, producers of 18 different kinds of artisanal breads and rolls. Founder Jim Amaral was worried last spring when Hannaford Supermarkets decided to move his bakery from the prime retail location it occupied in one of Hannaford's Portland stores. But the company now plans to open its third bakery and its first cafe at a location on Ocean Avenue in Portland. In the midst of expansion, Amaral is dealing with serious challenges facing bakeries - skyrocketing flour prices and increasing fuel prices. Amaral uses as many Maine-made ingredients as possible, and tries to support the small Maine stores that carry his bread. With a timeline of the company from its founding as Bodacious Breads in 1993.
