Abstract

“On the Record” piece features an edited transcript of an interview with William Henry Holmes. Holmes, along with partner/chef Alvah Franklin Johnson, plans to open an upscale restaurant-cum-gas station in Bridgton called Standard Gastropub. Holmes discusses how he came up with the idea, the cuisine they plan to serve, and his expected revenue and plans for growth.
