Abstract

Aroostook County has long been referred to as Maine's Potato Empire. Due to the County's rich and fertile soil, as well as a short season, potatoes became the dominant crop as early as the 19th century.
With contemporary consolidation, potato farms are bigger but fewer in number.
Wood Prairie Family Farm in Bridgewater profiled in this article, began in 1976, and currently grows 10 acres of potatoes. Founder Jim Gerritsen emphasizes retail, while also wholesaling. Gerritsen added, "Most farmers are spending virtually all of their time on production. We spend the majority of our time on marketing."
