Abstract
"Cuiscene" piece on Roxanne Quimby's Quimby Culinary Colony located in the former Roma Cafe in Portland. The Colony's CEO, Dan O'Leary, initially worked with Dan and Samantha Lindgren, owners of Rabelais, to work on plans for the organization. However, the Lindgrens were disappointed with the progression of the project and are no longer affiliated with the Colony. Although the Colony has hosted some events such as an Italian food festival and gatherings of Slow Food Portland, the Colony's chef-in-residence program was shut down after Chef James B. Simpkins had been there for only seven weeks of an intended six month residency.
