While naturally fermented food has been a method of preservation for years, it has recently become a hot trend. Fermentation business, Urban Farm Fermatory is profiled, as well as other farms and creameries that produce fermented food products (Thirty Acre Farm, Swallowtail Farm, and Old Ocean House Farm, Tide Mill Creamery).
