    Description

    Martha Elkus and Bill Harris, owners of Big Sky Bread Company, 536 Deering Avenue, displaying some of the many types of breads and rolls produced in the bakery. Big Sky bakery located in the former Portland Fire Department Engine Company 8 firehouse (built in 1907), opened for business in 1994.

    Quoted in the Maine Sunday Telegram, "They use Maine honey as a sweetener, and no sugar, preservatives, or oil. The label on whole wheat honey lists wheat, water, honey, salt, yeast. It is short, Elkus notes, 'and you can pronounce all the words.'"
