Abstract

"Dining Down East" piece on Francine in Camden, run by chef-owner Brian Hill. Hill grew up on a farm in nearby Warren, and almost everything he cooks at the bistro-style restaurant is local. He uses Maine seafood, and from Maine farms he obtains chicken, beef, cheese, and produce--both in and out of season--bringing out the best in his ingredients.
