Abstract

Bill Broadbent, owner of Freeport-based Bugs for Dinner, is pioneering Maine’s first insect farm. As a promoter of insect protein in one’s diet, he is developing foods and treats that use various insects in creative ways. He has been contacted by the United Nations Food and Agricultural Organization to discuss bug-farming strategies for the developing world.
