Abstract

Seafood recipes from four Maine chefs that highlight Gulf of Maine groundfish like pollock, monkfish, and hake, fish that are usually overlooked in favor of cod and halibut, which are being overfished. Eating a diversity of types of fish will help fishermen.The chefs who provided recipes include: Matt Kramer, of Rosella KPT in Kennebunkport, Mimi Weissenborn of Portland's Sur Lie and Yarmouth's Gather, Billy Hagar of Portland's Helm Oyster Bar, and Josh Ochoa of Natalie's in Camden.
