Abstract

"Focus on the Bangor Region" piece on University of Maine professor and food researcher Al Bushway, who made the news this summer with his experiments mixing blueberry puree into ground beef. Last year, the Department of Food Science and Human Nutrition moved into a new building. Bushway's research and development work over 25 years at UMaine earned him the Institute of Food Technologists' 2003 Elizabeth Fleming Stier Award for pursuit of humanitarian ideals and other contributions. Much of his work deals with foods important to the state and with finding ways to add value to the commodities and develop new products. He says one of his favorite projects was helping create a salmon sausage with a long shelf life.
