Abstract

A study funded by the University of Maine at Orono's Lobster Institute and the Northern New England Product Development and Marketing Center has shown that frozen Maine lobsters maintain taste and texture over time. Results of the study, which evaluated frozen lobsters over a nine-month period, were presented at the International Lobster Congress in Portland.
